A Chunk of a Chocolate Chip Muffin

Can you really believe at how fast this week is flying by. I have been having a craving for some muffins treats as of late and I have some really fun recipes to share with you that involve chocolate and caramels.  Today’s recipe is a simple muffin gone chunky Golden chocolate chip muffins baked in the kitchen Talk about a treat for your mouth!  These are not the healthiest muffin to eat but now come on….. nothing a dozen would ever hurt.

Preparation time: 10-15 min        Cooking time: 20-25 mins;     
Serves: 10-15


Ingredients:
 •  Maida    2 cups
 •  Brown sugar    1/3 cup
 •  Sugar   1/3 cup
 •  Baking powder   2 tsp
 •  Salt    1/2 tsp
 •  Milk   2/3 cup
 •  Butter, melted and cooled   1/2 cup
 •  Eggs, lightly beaten   2
 •  Vanilla essence   1 teaspoon
 •  Chocolate-chips  50 gms
 •  Chopped walnuts 1/2 Cup

Method:

Step 1: Preheat oven to 400°F. Line twelve muffin tins with the shells.
Step 2: In a large bowl, stir together maida, sugar, baking powder, and salt.
Step 2: In another bowl, stir together milk, eggs, butter, and vanilla essence until blended. Step 2: Make a well in center of dry ingredients, add milk mixture and stir just to combine. Stir in chocolate chips.
Step 2: Spoon batter into prepared muffin cups.
Step 2: Now bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean. Remove muffin tin to wire rack. Cool for 5 minutes then turn out of muffin pan.

The Rajs' Kitchen Tip:
Use an ice cream scoop to fill the cups in the muffin pan. This will measure your batter equally for each muffin and avoid a mess.

Chocolate Brownies
Let me start this blog with a delicious Brownie recipe.Sometimes, you’re just really craving for something sweet and chocolatey. One Sunday night, I found myself longing for Chocolate Brownie. It got into my head and I couldn’t get it out. I hadn’t had one in years but suddenly I was craving one. Then I baked this recipe. I got the yummiest chocolate brownies. If you love chocolate, then you will definitely adore these brownies. The Chocolate brownies, mmm… squares with layers of broken up chocolate chip and fudge, layer after layer, all topped with whipped cream and chocolate sauce. Pile them one on top of another in one amazingly decadent, sinful treat. Add a scoop of vanilla ice cream if you want to go the truly sinful route, Oh.My.God. Everyone needs a piece of this in their life.


Preparation time: 10-15 min,    Cooking time: 20-25 mins;    
Serves: 10-15
  
Ingredients:  
 • Dark chocolate  1 cup        
 • Flour (maida/wheat flour) 1 cup
 • Baking powder 1 teaspoon     
 • Walnuts (shelled) 1/2 cup
 • Butter 90 grams        
 • Castor sugar 1 cup    
 • Eggs 2   
 • Vanilla essence 1 teaspoon       
 • Butter/Oil for greasing 

Method:  
Step 1:  Preheat oven and grease an eight-inch square cake tin.
Step 2:
Sift flour and baking powder together.
Step 3:
Mix the chocolate and butter in a large bowl and microwave to soften, for a minute or melt it in a double boiler.
Step 4:  Beat in eggs,vanilla essence and sugar together and blend well.
Step 5: Add the sifted flour and mix well and finally add the walnuts(Make sure it is in a pouring consistancy)
Step 6: Pour the mixture into the prepared cake tin and bake in the preheated oven for forty five minutes.
Step 7: Cut into squares and store in a air tight container when cool. 


To serve:
Warm the brownie piece in microwave for about 30 to 40 sec and place it in a bowl. Top it with a scoop of vanilla icecream and decorate with chocolate sauce,choco chips and crushed munch/perk.
